Cranburry & Quinoa Breakfast Bars

 

Ingredients

75g Quinoa

150g Dried cranberries

1 tbsp Chia seeds

1 tsp Ground cinnamon

2 tbsp Maple syrup

75g chopped cashew nuts

1 egg white

2 tbsp water
Method

  • Heat the oven to 180C and line a baking tray with parchment paper
  • Place the cashews and quinoa onto the tray and bake for 8-10 mins until golden and fragrant
  • Put the dried cranberries and honey in a food processor and blend, slowly add the egg white and water
  • Add the cranberry paste to the quinoa, adding a few additional whole cranberries
  • Transfer the mixture to the baking tray and bake for 20-25 mins until firm
  • Remove from the oven and allow to cool
