Not Mush Beet Burgers

Mushroom and beetroot burgers, intensely earthy 


300g pre cooked beetroot
3 mushrooms
1 small red onion
1 garlic clove
handful of spinach
1 egg
50g ground quinoa (Quinoa Flour) 
40g polenta
1 tsp worcester sauce
2 tsp paprika 


  1. In a frying pan sauce the garlic, finely diced onion and mushrooms until cooked and softened. 
  2. In a large bowl blend the beetroot, mix in 1 egg and season with pepper, paprika and worcester sauce 
  3. add the cooled mushroom mix and combine
  4. add polenta and quinoa and set aside in the fridge for 30 mins 
  5. using a burger press form 4 burgers 
  6. in a pre-heated oven (200C) cook for 20 mins (Sprinkle the baking tray with polenta to help prevent the burgers from sticking.
