Spinach & Blueberry Protein Pancakes

Ingredients 

1 cup rolled oats

Large handful of spinach 

1 tbsp milk

2 scoops of whey protein. (Optional) 

5 pitted and ready to eat dates 

1 tbsp sunflower seeds 

Toppings

Blueberries 

Honey

Method

  • Place all of the above ingredients into your blender and blend until smooth
  • Place 1 tsp of oil in a frying pan 
  • On a medium heat, pour your mixture into the pan. Leave and allow the bubbles to naturally form on the surface. 
  • Flip and cook for a further 1-2 minutes
  • Serve
