BBQ Pulled Chicken Quesadillas

….make it a Mexican night with these super tasty BBQ Pulled Chicken Quesadillas for you to try this week! A spicy treat for all the family.
BBQ pulled chicken Slow Cooker recipe
Turn on your slow cooker (high)
Ingredients for the filling:
- 2 large chicken breasts
- 300ml passata
- 1 red onion
- ½ red chilli
- 1 garlic clove
- 1 teaspoon garlic powder
- 1 tablespoon tomato purée
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- Salt to taste
- 1 tablespoon Balsamic vinegar
- 2 tablespoon molasses
- 1 cup, 3 oz or 85g sweetcorn (optional)
Place all the ingredients into the slow cooker, stir and stew for 6-7 hours
Quesadillas (Tortilla wraps)
Ingredients:
- ¼ cup ground almonds
- ½ cup milled chia and Linseeds
- 2 tbsp cornstarch (or 4 tbsp tapocia flour)
- 2 tbsp light extra virgin olive oil (or coconut oil)
- 3 tbsp warm water
Method
Place all ingredients in a bowl and mix until fully combined.
*Add more water if mix is too dry
**Add more ground almonds if mix is too wet
Separate the mix to form 3 balls
Place each ball between two pieces of baking parchment and roll out to your desired thickness
Fry on a low heat, allow bubbles to form on the surface
Flip and cook for a further minute
