LeanBean’s Signature Bake Permission Sticky Pudding



1/2 cup spelt flour 

60g  Montmorency Cherries 

20g walnuts 

1 tsp Baking Powder 

1/2 tsp Ginger 

1/2 cup sugar 

Pinch salt 

30g milled Chia seeds 

2 persimmons (pulp only) 

125ml cup milk 

1 tsp vanilla 


  1. Combine the dry ingredients: flour, cherries, crushed nuts, sugar, ginger, baking powder and a pinch of salt 
  2. Combine the wet ingredients: Persimmon pulp (blended until smooth), milk, vanilla and eggs 
  3. Add the wet mix to the dry and combine 
  4. Place into moulds and bake for 25minutes at 180C
