Banana and Coconut Cake


3 Large ripe bananas
100g Coconut Flour
5 Eggs
25g Lucuma Powder (0r sugar)  
40g Almonds
1 tsp Baking powder
1 tsp Vanilla extract


1. Preheat the oven to 180C
2. In a large bowl, fork mash the bananas. Add the coconut flour, eggs, lucuma powder, baking soda and vanilla extract. 
3. Whisk the mix until smooth. Add the almonds. 
4. Pour the batter into a lightly greased and lined loaf tin (or use a silicon loaf tin). 
5. Bake for 45 - 55 minutes. 
6. Allow to cool and slice
