Hearty Salmon Salad

Become heart-smart by eating well and moving more.

Try to introduce some oily fish into your diet (Salmon, mackerel, kippers, Tuna steak, pilchards etc), alongside some whole-grains and healthy fats (olive oil, olives, avocado etc) and look to limit the amount of process foods, foods high in saturated fats and limit high sugar foods and beverages. 

By far one of my favourite dishes. A delicious simple to prepare healthy-for-the-heart fresh ingredients. 

Ingredients (serves 2) 

2 Salmon fillets (marinaded in chilli and lime - optional) 
6 Moroccan spiced falafels
mixed leaves
2 tbsp moroccan hummus
150g feta cheese
100g green olives
1/2 cucumber
6 cherry tomatoes
pickled beetroot
1 avocado
Balsamic glaze


1. Pre-heat the oven to 180C. 
2. Bake the salmon in the oven for 15-20 minutes (or follow the package instructions) 
3. In a large salad bowl add the mixed leaves, add chopped cucumber, diced avocado, crumbled feta cheese, falafel's, cherry tomatoes, pickled beetroot and then dollop some moroccan hummus in the centre. 
4. Once the salmon is cooked, add to the top of the salad and serve with a drizzle of balsamic glaze.
