Peanut butter Banana Cake (Gluten Free)


1 1/2 cups of Quinoa Flour

1/2 cup of Oat flour (Gluten free Oats blended to a flour - Can use normal oats, but recipe will no longer be Gluten Free)

1 tsp Baking powder

3 ripe bananas

2 tbsp maple syrup

1 tsp cinnamon

3 tbsp peanut butter

1 large egg

1/2 unsweetened Almond milk

50g Dark chocolate >70%

4 dried apricots


  1. Pre-Heat the oven to 180C

  2. in a large bowl add quinoa flour, oat flour, baking powder and cinnamon. Combine

  3. in another bowl combine the wet ingredients: egg, almond milk, honey and mashed bananas

  4. add the dry ingredients to the wet and combine

  5. roughly chop the dark chocolate and dried apricots.

  6. pour the 1/2 the mixture into a baking tin and scatter the 1/2 dark chocolate, 1/2 the dried apricots and dollop teaspoons of peanut butter.

  7. add the remaining mix and top with left over chocolate, apricots and peanut butter

  8. place in the oven and bake until golden brown and a toothpick comes out clean, ~40mins.

  9. allow to cool on a wire rack for 10 minutes
